  • 2 bottles ( 1 ounce each ) red food coloring
  • 3 tablespoons unsweetened cocoa powder
  • 1 cup buttermilk 
  • 1 teaspoon vanilla 
  • 1½ cups sugar 
  • ½ cup ( 1 stick) unsalted butter, softened 
  • 2 eggs
  • 1 teaspoon white vinegar
  • 1 teaspoon baking soda
  • 1 to 2 containers ( 16 ounces each) whipped cream cheese frosting 
  • Toasted coconut* ( optional )

INGREDIENTS

  • 50g/ 2oz/ ¼ cup pudding rice
  • 2 tbsp superfine sugar 
  • 600ml/ 1pt/ 2½ cup milk 
  • 15g/ ½oz/ 1 tbsp butter
  • 1 cinnamon stick, broken in half
  • 1 tsp vanilla extract 
  • A pinch of ground cinnamon 

INGREDIENTS FOR THE PIE CRUST

  • 225g/8oz/2 cups all-purpose flour, plus extra for sprinkling
  • 1 tbsp superfine sugar 
  • A pinch of salt 
  • 50g/2oz/¼ cup vegetable shortening
  • 50g/2oz/¼ cup butter
  • 1 egg yolk
  • About 50ml/ 2fl oz/ ¼ cup cold water

INGREDIENTS FOR THE FILLING 

  • 6 eggs
  • Grated zest and juice of  6 lemons
  • 200g/ 7oz/ scant 1 cup superfine 
  • Sugar 
  •  100g/ 4oz/ ½ cup butter, diced

INGREDIENTS FOR DECORATE

  • A few mint leaves
  • 2 tsp confectioner's sugar (optional)
